2 Easy Date Recipes That Taste Like Snickers & Cookie Dough (Healthy & Delicious!)

If you love sweet treats, like I do, you will absolutely LOVE these recipes. Dates are a staple in healthy desserts because they add so much natural sweetness and also have a chewy texture along with a caramel flavor. These recipes couldn’t be easier to follow, use minimal ingredients AND will satisfy your sweet tooth. You can also make these ahead to have them ready, but they seriously only take 2 minutes to put together, that it’s not necessary. 

Date Recipe #1

This recipe reminds me of a healthy snickers. The flavors together are incredible and I can’t get enough. This is my go-to nighttime dessert. I make these like 5 times a week lol. 

Ingredients:

  • Dates, pitted (I buy mejool; also, if you buy ‘whole’ dates, make sure you take the pit out, it’s easy. You can use as many dates as you want for this, but I typically make between 3-4 a night for myself) 
  • Semi-sweet chocolate chips (look for one with no or little added sugar; I like the brand Enjoy Life)
  • Your favorite nut butter (I use Sunbutter)
  • Chunky sea salt (I use Maldon, get it here)

Method

Cut open your dates, but just so they are split, not fully cut in half. If you have whole dates, now is the time to remove the pit. Flatten the dates gently (they don’t need to be flat, but just so they aren’t curling up on the sides). Add about a teaspoon of your nut butter to each date. Now, you will melt your chocolate. For the chocolate chip ratio, I measure with my heart, but I would say I use about 1/3 cup of them. Please use a microwave safe bowl for this 🙂 start by microwaving the chocolate chips for 1 minute. When the time is up, give it a good stir and microwave for 30 seconds longer. Give it a good stir again and now spoon about a teaspoon of the melted chocolate on top of the nut butter. Once all dates are coated in the melted chocolate, top with the flaky sea salt. Put in the freezer for at least 1 hour, but the longer the better because the chocolate sets fast, but the nut butter needs a little more time. After the time in the freezer, take out and enjoy!!

Date Recipe #2

This recipe reminds me of cookie dough. It’s so chewy and the flavors are insane, in the best way. I know it will sound a little crazy at first, but I SWEAR it’s so good!

Ingredients:

  • Dates (same notes as recipe #1 in regards to picking which kind)
  • Salted, good quality butter (this definitely varies store to store; no need to buy a new package of butter just for this recipe, use what you have. If you need new butter though, grab high quality butter)
  • Chocolate chips (I use semi-sweet; go for a no or low added sugar option)

Method: 

Cut the dates open (for this recipe, I only do 2 of these because they’re so filling for some reason!). Now is when you will remove the pit, if you bought whole dates. You won’t be flattening these dates, like we did in the prior recipe. Now, cut a small sliver of butter and place it inside the date. Press a couple chocolate chips into the butter and enjoy! These are so easy to make and so insanely delicious. I was weirded out when I first saw someone mention the recipe, but then I tried it and I can’t get enough.
