Egg roll in a bowl

First real post back is going to be a recipe because IT IS SO GOOD.

I mentioned in my ‘where have I been’ post that I am currently in my postpartum period. When it comes to food, I am looking for fast & easy and not terribly unhealthy. This recipe literally takes 10 minutes and you don’t have to chop anything crazy – just garlic and scallion.

Ok, so as for groceries, you are going to need a ground meat (I used 1 lb) of your choice – I used organic beef, but chicken or turkey would be good too. You could even use tofu or tempeh if vegan/vegetarian. You will also need some type of slaw. I found one at the Stop N Shop by me, but Trader Joe’s has a yummy one too called Cruciferous Crunch. You will also need toasted sesame oil (I had this on hand already), a clove of garlic, sriracha & mayo (or spicy mayo if you randomly have that lol), an egg or two (honestly this is to your liking – I used 2) sesame seeds and scallion for garnish (if you want obvs. Garnishes always annoy me in recipes, but these actually do make a difference here).

So, how do we make this deliciousness? Never thought you’d ask. Add your chopped or minced garlic to a pan with a little (I mean suuuuch a little) oil of your choice (don’t use the sesame oil). You just want to cook the garlic a little to get it nice and fragrant. Once the garlic is cooked (like 2 mins?), go ahead and add your protein and cook through. I added a pinch of salt and pepper to the meat too. If your pan is big enough, move the protein over to one side (if the pan isn’t big enough, sorry.. you need to dirty up another pan :/ ) and add the slaw to the other. Drizzle a bit of the sesame oil over the slaw and let it cook for a few minutes – the idea here is to just soften the veggies, so keep an eye on them; this honestly only takes like 2 minutes-ish. Once the veggies are soft, make a little hole in the middle of the pan (if using two pans, you can make a hole in the middle of the veggie pan) and crack your egg(s) directly in. I just let them sit for like a minute – while waiting, I made my spicy mayo – so easy. Literally just eye ball some mayo and some sriracha in a bowl and stir it up with a spoon; just add more until you like it. I love spicy foods, so I added a ton of sriracha and just a touch of mayo. Now, go back to your pan and stir the egg into the rest of the food – it probably won’t be fully cooked yet and that’s ok. You are going to cook everything together for a minute or two to let the flavors combine. Top with sesame seeds, chopped scallions and drizzle your spicy mayo on and voila! Deliciousness. Also, it stores overnight great 🙂
