So, if you’re like me – you’ve tried overnight oats countless times and they are just… blah. I found a pretty good recipe on pinterest a while back but tweaked it to make it even better. I’ll make this short and sweet:
Ok so you will need:
. ¼ cup rolled oats
. 1 tablespoon chia seeds
. 1 heaping table spoon peanut butter
. ½ cup any type of milk you like (for this recipe I usually use coconut milk)
. cinnamon
. salt
. vanilla extract
. maple syrup
. 1/4 cup any type of berry or fruit (besides bananas)
. about a quarter of a banana, chopped small
So first, put the oats and the chia seeds into whatever you are using for your overnight oats (I use a mason jar since it seals really tight and then I can throw it in my bag the next day when I head to work; you can use tupper ware or anything else that keeps it from spilling). Now, I add the milk and close up the mason jar and give it a really good shake – if you are using tupper ware, just stir the oats, chia seeds and milk. You can now add everything else in – I loooove peanut butter so I add a very heaping tablespoon of it in. As for measurements for the cinnamon – I love this spice, so I use a few dashes. The salt, I only use a small like pinch; vanilla extract – just a tiny dash; maple syrup – this is to sweeten things up – I probably use about a tablespoon.. maybe a touch less. You can add in your ¼ cup of fruit now and also your chopped banana. Give the mason jar and good shake again, put it in the fridge, grab it in the morning and you’re golden. Now, I know some people prefer heating up their oats… I don’t do this. I would assume you heat them in the microwave for a minute and a half or so? Proceed at your own risk with that though. I enjoy cold overnight oats.
I should also mention that pretty much everything besides the oats, chia seeds and milk is customizable. If you don’t like peanut butter, use almond butter or nuts. Prefer to not have fruit? I hear you can make zucchini oats?? You can totally switch out ingredients for what you’re feeling that day.
